Blend: Cabernet Sauvignon (60%), Syrah (20%), Merlot (10%), Cabernet Franc (5%), Petit Verdot (5%).
Origin: Sierras de Málaga, subárea Serranía de Ronda, Spain.
Oak time: 12 months in French (95%) and American (5%) oak barrels.

The harvest:  The 2004 grape harvest was Very Good in Pasolargos, and it was even Excellent in some estates.

Winemaking and Aging:
The grapes were hand-picked, deposited in crates and transported to the Winery where they underwent a second selection at the selection table. Our grapes are harvested only after the optimal maturity point is reached. A cold maceration is run before fermentation to preserve and enhance colour, aromas and flavour complexity. Each of the different grape varieties ferments in separate stain steel tanks for 6 to 8 days. Subsequently, the maceration lasts between 5 and 7 days. The wine is aged in new French (95%) and American (5%) oak barrels during 12 months.

Tasting Note:
The wine presents an intense red colour. The aromas combine blackcurrants from Syrah, intense spicy notes from Cabernet Sauvignon and blackberries from Petit Verdot. On the palate, there is a perfect balance between fruit and oak. The wine is full-bodied and presents mature tannins that give a great structure. A charming wine.
